Dish to Die For: Mandaberry Waffle

THERE MAY NOT BE a more OG breakfast location in Fort Collins than Café Bluebird. Homemade bread, fresh-cooked breakfast and lunch and enthusiastic portions have been de rigueur since 1982. The Bluebird bakes their own wheat bread, and hearty skillets, omelets, Benedicts and crepes will satisfy any daybreak craving. But my favorite indulgence is the Mandaberry Waffle—a crisp Belgian waffle covered in ripe strawberries, blueberries, mandarin oranges and sweet-tart lemon cream cheese. There’s not a lovelier combo of flavors and textures to make any gray morning a little brighter. If you want to go big you can always order an egg and housemade sausage patty to go with.
